I love all dry curries, it goes well with rice and roti. When we run out of vegetables and want to make a quick curry, legumes and beans come in handy. Of course you need to soak them but once soaked, it is easy to make curry or gravy.

About Soybean Curry
Soybean curry is made using soybeans, onions, spices, herbs and freshly ground spices. This is a simple, delicious dry curry and is very useful when there are no vegetables in stock or there is no time.
I always make sure that my pantry is full of dry beans like soya, double beans, chickpeas or peas. This is undoubtedly a healthy and tasty curry which is a great side dish with rice and roti.

Soybean Curry Ingredients
- Soybean – I use white dry variety soybeans. Soak it overnight and then pressure cook it and use it.
- Onion After adding the seasoning ingredients, the onion is fried.
- Tadka – Oil is heated, mustard seeds, curry leaves and cumin seeds are fried in the preheated oil.
- spice paste – Roast coriander seeds, red chilli, ginger and garlic with coconut and grind it to make a masala paste.
- Masala Powder – Turmeric powder and sambar powder are added.

How to make soybean curry
- Soak soybean overnight. Next day drain the water and pressure cook with salt, turmeric powder and required water for 2-3 whistles or till the soybean becomes soft.
- First of all, grind the following ingredients to make a coarse paste and keep it aside.
- Heat oil in a pan, add mustard seeds and cumin seeds and let them splutter, then add curry leaves. Now add onion and fry until it turns light brown.
- Then add the ground paste to it and fry until its raw smell goes away and it becomes brown and roasted well. At this stage add cooked soybean and mix well.
- Cook on low flame for 2-3 minutes until the curry gets mixed well with the soybean. Switch off.
Expert Tips
- Adding sambar powder is completely optional.
- When the soya is cooked, it is okay if the skin of the soya comes out a little.
- You can find soybean in most supermarkets.
- Although we get fresh only during the season, you can use dry.
serving and storage
Soybean curry can be served with rice, roti etc. This curry keeps well in the refrigerator for 2 days, reheat and serve.

- ¾ cup dried soybeans
- 1 small onion finely chopped
- ¼ small spoon Sambar Powder Optional
- salt as required
- a pinch of turmeric powder
to Grind:
- 3 tablespoon grated coconut
- one and a half small spoon coriander seeds
- ¼ inches ginger piece
- 2 cloves Garlic
- 2 red chilli
To get angry:
- one and a half small spoon mustard seeds
- one and a half small spoon Cumin
- 1 and ½ small spoon Oil
- some curry leaves
