Yam Fry is a spicy fry that goes well with rice and yogurt. It is very satisfying to have simple yam fry with any rice, be it different types of rice or rice with sambar, rasam etc. My favorite combination is curd rice or sambar rice with yam fries.

About Yam Fries
Yam fry is easily made by first cooking the yam, then roasting and grinding it, marinating it with spices, then frying it with seasonings. yam fry is called Senai Kizhangu Varuval in tamil, Suran Fry in hindi and Kandagadda Vepudu In Telugu.
Sometimes making weekday lunches is boring and last week was a day when I was in no mood to cook. To add to this, I opened the fridge and saw that there was only 1 radish and a week old yam left after making Kalaan. So I cooked sambar and added all my favorite ingredients to make this fry and lo and behold we totally loved it, so it justifies the post here.

Yam Fry Ingredients
- Yam – Choose a medium-sized elephant yam. To avoid itching, buy it and keep it for a few days and then cook it.
- spice powder – Turmeric powder and garam masala powder are used.
- fry and grind – Coriander seeds, fennel seeds. Fry garlic and red chilli and grind it to make a coarse mixture.
- Tadka – Oil is heated and then seasoning of mustard and curry leaves is applied.
How to Make Yam Fries Step by Step
1. Dry roast the ingredients listed under ‘To roast and grind’ until they turn brown and become aromatic. Cool and pour into mixer jar.

2. Grind into a coarse mixture, keep aside. Cut the yam into squares and wash thoroughly to get rid of the earthy smell.

3. Then cook it with turmeric powder until it becomes soft and crisp enough to bite.

4.Now add garam masala powder along with the spice mixture and marinate, keep aside for 15 minutes. Heat oil in a pan – add the items listed under ‘For tempering’ and let it splutter.

5. Add marinated yam and fry until golden brown. Add salt if required. It will take at least 5-7 minutes on low flame. Switch off.

Serve hot with rice and curry.
Expert Tips
- You can make it more masala/gravy like by adding a little water.
- This recipe also works well for potatoes and raw bananas.
- While cooking yam, take care not to mash it.
- Choose older yams to avoid itching when cutting and eating.

Yam fry can be served with rice, bread etc. This yam fry keeps well in the refrigerator for up to 2 days, reheat and serve.

- 1 small spoon fennel seeds
- 2 clove Garlic
- 2 Small dried red chilli

- 1 tablespoon Oil
- one and a half small spoon mustard seeds
- a small one twig Curry leaf
